With its mild climate, fertile volcanic soil, and heavy rainfall, there is no place on the planet for cultivating coffee like Colombia. The home of Juan Valdez boasts the most diverse coffee-growing territory in the world. It stretches from the Equator to 12 degrees north in latitude and from 72 to 78 degrees west in longitude over three cordilleras of the Andes Mountains. The result is an unusually rich biodiversity and an unparalleled variety of top-quality Arabica coffees that are harvested year-round.
The uneven terrain and dense vegetation of this mountainous land make coffee farming difficult. Incredibly hard work and dedication are required to yield the precious crop. Colombian coffee trees are still cultivated individually. Coffee berries are picked by hand. This time intensive method is the proud tradition of Colombia’s cafeteros and why Colombian Coffee is one of the most sought-after coffees in the world.
Colombian Coffee begins as beans, sown together with river sand and carefully cultivated in a nursery for six months before being transferred individually to farms often no larger than a few acres. After more than two years of hand pruning, watering, weeding and mulching, the Colombian Coffee trees burst into blossom with bright white flowers and green coffee berries.
When they reach maturity, berries are individually handpicked and transported down the mountain on mules to be separated and fermented, a process that releases the rich aroma and flavor that is unique to Colombian Coffee. The resulting beans are then washed and left to dry in the hot Colombian sun.
Damaged or unripe beans are removed by hand and samples are roasted and brewed to be tested for quality, aroma, strength and flavor. Only after the beans meet the high standards set by the cafeteros’ cooperative, the National Federation of Coffee Growers of Colombia, are they allowed to be shipped overseas for the enjoyment of coffee drinkers around the world.
Brewed to perfection, Colombian Coffee delicately balances a pronounced yet mild aroma with a rich and smooth flavor and a medium body.
