Brewing Coffee should not be brewed for more than 8 minutes. The initial water temperature should be at 205º F; proper temperature during brewing is 200º F +/ - 5º F. To get a fully developed taste, 18 to 20% of the coffee must be dissolved in the hot water. If under extracted, the coffee will have a weak, flat taste, and if over extracted, the coffee will be bitter. To keep fresh coffee hot: Heat causes coffee to continue to extract, bringing out burnt, bitter and unpleasant flavors.; as such, coffee should not be heated for more than 25 minutes and ideally at 180º-190º F. To keep fresh coffee hot and drinkable pour it into a thermos. This will maintain the heat and avoid cooking the coffee down. | |
